Feedback welcome as this isn't something I typically make.

 

10lb CMC Pale Ale Malt

8lb Best Malz Vienna Malt

1lb Carared

1lb Carapils Copper

0.5lb Special B

0.25lb Pale Chocolate

 

1oz Nugget @ 30

1oz Columbus, 1oz Chinook, 2oz Comet @ flameout

1.5oz Columbus, 1.5oz Chinook, 3oz Comet @ hop stand

 

Ferment on Verdant IPA yeast slurry

 

SRM: 13

IBU: 34

OG: 1.056

 

Dry hopping?  I might do some but maybe not....

I like my reds a little darker. The red I brewed in early December had (for a 5 gallon batch) 1 lb of crystal 120 and 3 oz chocolate malt, just pilsner for base, though a little Munich would have been good. Ended up at 6.0% and about 45 IBU. Was really good, actually I'm still working on it.

6oz midnight wheat

15oz C100

11oz special B

4oz pale choc

 

amounts are strange b/c I already measured water and I was using up some bags of stuff.

 

SRM is about 22-23 now

 

Thanks for the push to make this darker.  I was on the edge.

replacing comet with cent to save the comet for later and my cent should probably be used up.

all of that increased darkness meant I no longer need to add 3mL of lactic to my mash so one less thing to do!

had to adjust hops again due to what I had.

 

the hop stand is now: 1.8oz columbus, 3.3oz chinook, 0.9oz cent

 

 

 

so looks like I'm doing a BIAB (not on purpose today).  I somehow knocked some tubing in my my mash tun loose so there is no way to drain it the regular way now.  so I guess I'll be using my 5 gal paint strainer bag to separate the liquid from the solids here. uuugggghhhhhhh this is gonna suck.

I'm busing out my old Denny Conn style cheap and easy mash tun baby!  the inside is all stained from making dark beers but I gave it a rinse and it should be good to go.

 

 

this gives me an idea.  instead of BIAB I could just get a new pickup tube for this mash tun and put my SS braid on the end of it and call it a day.  it's really the stupid false bottom and all of the BS involved with hooking up to the pickup that causes my issues.

even this is pretty slow to drain but at least it's draining.  changing my mind back to BIAB in the future.  need to shop for some hardware first though....

somehow about 1 pint of wort escaped the fermentor when I was draining into it so that was a fun chest freezer cleaning I just had to do.  fortunately I still have a winch over the freezer so I could hoist the keg full of wort out of there to more easily clean.

dry hopping in primary with 6oz of chinook (using up what I had left) and 2oz of comet.  I think mostly pine is a good way to go for a darker beer like this.

Slightly more rust then red I think. Going to start cooling tonight. Fg was 1.013 which is a little more attenuation then I've seen with this yeast lately.

How did this turn out? I made an amber of sorts today.

 

5 lbs pilsner

5 lbs munich

12 oz crystal 60 

8 oz Fawcett dark crystal

1 oz chocolate malt 

 

32 IBU simcoe @ 45 minutes

1 oz simcoe @ 0 minutes

 

1.060

It looks good. I love hoppy reds. Obviously what I put together today is a little less red in color and more malt focused. Smelled fantastic, though.
