Can anyone reccomend something to do with beef tenderloin for new years?

 

I've done beef wellington and it's good.  I could always cut it into steaks and cook it that way... Anyone else have a recipe or method you love?

I was going to say sear and then finish in the oven, then baste and make a nice pan sauce. The only thing I'd add is trussing to maintain shape.

I think that's what I'm going to do.  Weather is going to be good here for the next couple days to get some flushes of oyster mushrooms. Might might a mushroom & cream sauce with them if I can find some.

I went to my mom's house on Christmas and she had a tenderloin but hadn't formed a full plan on how to cook it and asked me to. I cut off all the silverskin and extra fat, rubbed with olive oil, minced garlic, rosemary, thyme, salt and pepper.

500 degrees, pulled when internal temp was about 125. Came out beautiful.
