That is a lot of bicarb. Dark beers, gypsum, cacl, and acid are your friends.

you could either cut it with RO/distilled or just buy bottled water for brewing.  otherwise, like I said, you'll need to acidify the hell out of your mash via grain, salts and/or actual acid.

This.  And with the TDS level like that, I think I'd just go for buying.

That could be because I need to replace the water filter.


S-04 should do just fine in a beer like this.

I did buy some s-04 a few weeks ago.
