I made the starter this afternoon and it started bubbling pretty much immediately. This verdant IPA yeast is very active stuff I guess???

so lately my mash pH tends to be higher than predicted but today it's a little lower???  5.15 which is fine with me but normally I shoot for 5.3 and end up closer to 5.4 or 5.5.  I'm thinking my numbers for the base malt might be off?  today I'm using CMC pale ale for the first time in a long time.

cranking away this morning.  pitched yesterday at about 4:00 I think.  I had to wait for the chamber to cool the wort down since my ground water only got me down to about 80F.  I could have done more but I think my water costs more than electricity.

Appears to be done fermenting. 1.01 so about 4.7% abv. Def more towards the bitter side of balance than the last IPA I made with this yeast but that's what I was going for. Hard to tell right now exactly how it will be cold and not decarbed but even like this it tastes good. It's been a good whole since I've used cmc superior pale ale malt and I'm thinking I missed it

One time I used it in place of regular 2-row in a batch of Denny's ripa. I didn't know at the time that pale ale malt was a different thing then us 2-row. That was a rich and delicious beer.

Kegging now. Came out very clean, malty and balanced. Going to save a couple of mason jars of yeast cake for later use...
