Anyone have a good recipe that includes bone-in chicken thighs?

My dad went to the store and was planning on getting boneless, skinless, chicken breasts but ended up with bone-in, skin-on chicken thighs.  He whiffed three times!  :lol:  So now I have the package of them because he didn't want to mess with them... about 1.5 pounds.  I know the Filipino Adobo chicken recipe calls for these but I typically use boneless, skinless thighs.  So what's a good dish to make with these?  Cheers.

Jerk chicken is my go to.

The problem is finding good Chinese 5 spice. Not that McCormick crap.

I cook them in the instant pot and shred the meat (and make stock from the bones).

I have seen a video on how to do that but I have never done it.  Also, in the video for the Filipino chicken she made a comment about how the bone being in the chicken (and the skin) made a difference in how the chicken came out so I figured I would use this opportunity to see if it was better that way.

You can grill or smoke them with your seasoning of choice as is. Mostly Indirect or you'll have a giant fire.

I like to make chicken tinga with these as well.
