18 lb GP

2 lb white wheat

1 lb C40

1 lb carafoam

 

mash @ 151F, need to still work out water additions

 

1oz Eldorado FWH

boil starts at 30 min

2oz Eldorado @flameout

1oz bravo @flameout

1oz Idaho7 @flameout

3oz Eldorado @hopstand

1oz bravo @hopstand

2oz Idaho7 @hopstand

 

ferment on 34/70

 

SRM: 6.3

OG: 1.058

IBU: 35

 

some kind of dry hopping will happen.  I'm thinking of doing it in primary again but with my floating dip tube although I'm a little scared of that thing getting plugged up when I go to rack.  I dunno.....

 

the grainbill is set b/c I already measured it out.  hops I can still change.

Looks good. I have a pils mashing right now. Pretty basic for an upcoming get-together. I too, am using 34/70 and I'll use this yeast cake for a big lager.

yeah, depending on how together my shit is if I don't get the starter going for the 34/70 I may use the S-04/US-05 combo.  probably the 34/70 though.

I put the wort in at about 180 after a FO hop. The pool is cold now (57). Took about an hour to get to 64 which is about the temp I wanted.
Just pitched a pack of 34/70.

starter started up right away last night and is chugging along at a moderate pace this morning (lager yeast, amirite?!?).

 

just about to mash in.  I'm trying higher chloride than I normally do here (154ppm) with a slightly lower sulfate number (73ppm).  Ca is around 100ppm.

this is a first, pH 5.5 instead of predicted 5.3??  I wonder if my water has changed....

uhhhh.... so I mixed the lactic into the mash and then pulled another sample and the pH is slightly higher???? WTAF????

I took another reading of the first runnings after draining into the BK.  still around 5.5....

 

I just added another ~2.5-2.6mL of lactic to the first running and briefly stirred and grabbed another sample.  we'll see what I get now.  if it doesn't move I'm going to assume my meter is garbage or something???  I can't imagine it would be so messed up that I wouldn't at least see movement of pH.

so that last addition of lactic into the first runnings got me down to about 5.4ish.  something is def up.  I'm recalibrating the meter and checking my last sample to see if I still get 5.4.

so really weird, after recalibrating it kind of settled in at 5.3 and was happy but I left it on and came back a couple of minutes later and now it's settled at 5.4.....

so I've only had this meter about a year and a half.  probably used it about 20 times or so....

 

 

so I'm just going to leave this and get the boil going b/c the day is wasting away here.  ugh... hopefully next time things go smoother.  no idea what happened here.

I'm not going down that ph meter rabbit hole. My only acid additions are 4-5 ounces of acid malt in my lagers.

I mean, I wasn't at a completely unreasonable pH but I do tend to shoot lower on a lighter hoppy beer like this.  One thing I've never found is a calculator to predict how much lactic to take you from some pH to some other lower pH.  since pH isn't linear I'm not sure how this would go.  it might be pretty simple but I try to never assume that.

 

efficiency was around 76% which isn't too bad.

 

fermentation started up pretty quick as well.

 

eta: also a nice bonus is that I was able to use snow to chill the water going through my IC so that saved some water and/or electricity on my cooling.

My pils is close to done after a few days - down to 1.013. Would like to see it at 1.006-1.008. Going to make a big lager on the cake. Hopefully, this weekend.

You can do that in Beersmith
