My mom's weird but delicious thanksgiving "dressing"...

Have I mentioned this before?  I know we're past thanksgiving now but I made this last week and had leftovers of it that I had for lunch today.  Weird but good.  My mom is not a "soggy bread" person so standard "stuffing" does not appeal to her.  She's made this for as long as I can remember although when I brought it over there last week she said "What's that?" and I told her it was her recipe and she didn't remember.  But she did say it was delicious.

 

Make mashed potatoes as you normally would and set some aside.  Brown up some pork sausage that comes in a tube and while it's browning, throw in some diced onion and sprinkle with some poultry seasoning.  You can use sage as a substitute.  Get it good and browned and then just mix the mashed potatoes and the crumbled sausage together and then sprinkle with some breadcrumbs.  I usually put some turkey gravy over it too.  Sounds weird?  Yes but it's quite tasty.  Here's a web image...
