Pimento Cheese

I understand this is a Southern thing, but I've been eating it all my life and love it! Store-bought tends to be loaded with sugar and not very good. My mother's homemade was always my favorite but I think I've surpassed it by skipping the jarred pimento and roasting my own. Killer as a sandwich spread or a dip for raw vegetables.

Makes 4 cups.

1 medium red bell pepper and one l medium Poblano pepper, roasted over a charcoal fire until black and blistered. Place in a zip top bag to steam, remove skin and seeds. Dice.(Roast some garlic while you're at it)

1 & 1/2 cups mayonnaise.

8 oz. Block Extra-sharp Cheddar

8 oz. Block of sharp Cheddar

1.5 tsp Worchestershire sauce

1.5 tsp finely grated white onion and juice

3 cloves roasted garlic

1/2 tsp lemon juice

Salt to taste (may not need any)

Mix all ingredients except the cheese.

Grate the cheese into a large bowl. Half on the coarse side of the grater and half on the fine side.

Add the mayo/peppers mixture and fold into the grated cheese until well-combined.

Profit.

Better after overnight in the fridge.

My daughter who lives in Austin now has mentioned that a store-bought version is in her fridge quite frequently.  I'm not sure I have ever had it so I either need to find it or make it.  Thanks Darter.
