An APA with NE Ale Yeast

10 Gallons

15 lb GP

3 lb Vienna Malt

0.5 lb carapils

0.5 lb C15

 

mash at 152F

 

1oz Magnum/1oz Bravo @ 30 min

1oz Idaho7/1oz Azacca @ 0 min

3oz Idaho7/3oz Acacca/1oz Bravo @ hop stand

 

ferment on NE Ale Yeast cake

 

SRM: 5

OG: 1.061

IMU: 43

 

If I'm smart I won't carbonate it too much during primary this time and I'll dump in some combo of Idaho7/Azacca into the primary for the dry hop for a couple of days before transferring to kegs.

 

I could have used some citra/chinook but I want to save that for some drez APA in the future....

Considering using citra in place of some or all of the azacca as drez suggested in another thread. This means I'd def need to order some more hops because I can't be running out of citra.

I could put it in just about every hoppy beer I make  :covreyes:

yeast has been harvested for a hopefully friday brew.  should be rearing to go so hopefully no 48 hour lag time!


From what I know about Azacca and read about I7 you will need a LOT more Azacca in that blend to have it show.  I would go Citra :)

 

can I7 and citra be used at similar levels or does one need to be higher than the other?

I made a mistake in my spreadsheet and had 5lb of carapils :P

 

so I fixed that and upped the GP to 17 lb.  New OG is 1.055.  changed the azacca to citra.

 

so now the water...

 

Ca: 58

Sodium: 29

Sulfate: 88

Chloride: 64

Bicarb: -84 (negative!)

 

mash pH: 5.3

 

to get to those numbers I had to use a combo of gypsum, CaCl and lactic acid.

So I've reworked what I started with.  Got rid of Vienna.  Added some flaked oats.  Got rid of some of the 30 min hops.  Changed the water profile to be more chloride, less sulfate.

 

10 Gallons

 

18 lb GP

1.5 lb Flaked Oats

0.5 lb carapils

0.5 lb C15

 

mash at 152F

 

1oz Magnum @ 30 min

1oz Idaho7/1oz Citra @ 0 min

3oz Idaho7/3oz Citra/1oz Bravo @ hop stand

 

ferment on NE Ale Yeast cake

 

SRM: 4

OG: 1.054

IBU: 28

 

Ca: 51

Sodium: 29

Sulfate: 36

Chloride: 90

Bicarb: -84 (negative!)

While cleaning the brewery I found a decent amount of DME I bought a while back.  I think I am going to do a no-boil NEIPA with Citra and Idaho 7 this weekend and ferment it warm with Voss and see what happens.  I have not brewed in many month so this will at least get something on the taps.

Does dme deteriorate over time? I use some pretty old DME for starters but that's only a small portion of what ends up in the finished product.

I've only ever used DME for a full batch of beer when I've bought the DME recently. That's purely because I used to just buy recipe kits and then make the beer within a couple of weeks.

running off the 1st runnings right now.  the combo of GP and oats is a nice smell.  like breakfast :D

 

also kind of weird thing I just realized while I'm heating my sparge water.  I know what 170ish F water sounds like when it's heating.

so beer is getting to it's happy place now.  I think I could have completely forgone or greatly reduced the bittering addition at 30.  next time!

I actually changed to that later in the thread but you might not have noticed.  just 1oz of magnum.

Missed that, sorry. Looking at the revised I would lose the 30 and go with 1oz @10 and call it good.

No worries! I think if I did it at 10 I'd use something other than Magnum.

Agree. I would most likely use a split of the citra and I7.
