Just the grain so far....

 

15 lb 2-row

5 lb Vienna

1 lb C15 (maybe C20 depending on supplies)

1 lb carapils copper

 

this should put me around 1.055-1.060, SRM of about 7.

 

I have a bunch of good hops to use.

 

eldorado, azacca, idaho 7, citra, chinook, columbus

 

yeast will be a starter made with some yeast cake of 34/70 from a month or so ago.

 

I'm thinking of fermenting this at ale temps....

Keep the ferm temp at or below 65° (preferably at 60°) and the 34/70 will shine.

I like where this is going. I can see brewing something similar since I have the same hops on hand.

60 is pretty easy to do.  sounds good!

So thinking about this some.  I would bitter with the Columbus, hit it with a dose of Citra and Columbus at 10 then use  Columbus, Citra and Chinook in the WP. A nice DH of El Do, I-7, Citra and Chinook to round it out.

I need to check on how much columbus I actually have. Probably at least enough for bittering but possibly not for other stuff.

looks like I probably have enough columbus.  I still have some galena that is almost def older that I might use to supplement the IBUs.  seems like a good use for them.

I just went and looked and I have 6#'s of pilsner .. UGH that is not enough.  Need to fix that situation.

what else do you have on hand as a sub for pils?

I'm using 2-row this time because I noticed that's what jacks Abbey uses for at least one of thier ipls. I'd consider supplementing with that if acquiring more Pilsen wasn't possible. On a hoppy beer it would be tougher to notice I think.

Agreed.  For something iPA-ish, using pils or 2-row comes down to using what's on hand.

I have Two Row along with Golden Promise but I may have solved the situation.  Looks like I have have 2 bags of Pils and 1 of Golden on the way from a local brewery.  Crisis averted.

how much hops should I throw at this beer in the boil and WP?  should I really nail it in the DH more than the boil/WP side?

 

I'm kind of wondering if it might be nice to only dry hop half of this and let the other half be more "traditional" lager but with some fun american hops.

I would use more DH than WP for sure.  I would to 4-6 in the WP and then do 6-8 per keg.  Nothing wrong with leaving one plain.  They will be like 2 different beers.

I was going to add those hops at 10 instead of 5 but they were adding quite a bit of IBUs!

 

1oz Galena @ 30

1oz Columbus @ 5

1oz Citra @ 5

1oz Columbus @ hopstand

2oz CItra @ hopstand

2oz Chinook @ hopstand

 

IBU: 37

fermenter and kegs sanitized.

 

water and grain both measured out and ready to go!

 

did my bru'n water work.

 

just need to finish making a starter and I'll be ready to brew tomorrow morning :)

everything went pretty smoothly.  78% efficiency which is better than I've done as of late.  not sure what's up there.  my pH was slightly higher than planned at around 5.43 but otherwise everything was pretty normal.

 

starter smelled good so I poured it in!

I chilled the wort to about 14.4C (a little more than intended) and pitched the yeast yesterday.  It was fermenting this morning but I'm not actively heating it.  going to let it free rise to 15.5C (60F).  I'm thinking it will pull it off.  right now it's at 14.9C.
