ugh, slow start on the fermentation. I just cracked the lid and took a peak inside. there is some fine white foam on the surface which is a good sign but no outpouring of CO2 yet. I also think my gas post on the fermentor needs a new o-ring (the outside one) b/c it seems like it leaks around my QDs a little bit sometimes.

sorry about the poor focus (don't like to leave it open) but I can't tell if that's just the dry yeast sitting on top or what???
over 36 hours since I sprinkled the yeast on there.

To me that looks like the dry yeast. I am sure you have but have your swirled the fermenter some? 34/70?

I normally never swirl it but maybe I should start?

okay so I left it shut for a while and then stuck the blowoff back on and got a bunch of bubbles, a good sign! then I rocked the fermenter a little to hopefully encourage all of that stuff to get down to business and then I got some more bubbles out so I think things have started up.
I also replaced the o-ring on the gas tube post and it seems like maybe the QD is sealing a little bit better.

so I rarely look in my fermenters. is it normal for dry yeast to sit on top like that for that long? I've never swirled or anything in the past.

so I think part of this might be that my gas jumpers for clearing O2 out of my kegs during fermentation might not seal up on the gas post of my fermentor so it leaks slightly. it doesn't seem to leak as much against the spunding valve. not sure how much keg O2 flushing I accomplished though.

well this is on one of my outgassing jumpers. I think I know why my last beer didn't carbonate.

so anyway, I'm fermenting a little warmer than planned because I got spooked (very halloweeny). likely mid to upper 50s for a lot of this ferment and pretty soon I'll go into low 60s which is standard for me with most lager yeasts and def 34/70. I don't think it's going to really hurt the beer at all. everything I've experienced tells me that 34/70 don't give a fuck.

so first I noticed the sound of it leaking. then I loosened and retightened the plug on the top and I heard a bit of a crunch (I didn't tighten that hard). then I started trying to figure out where the leak was exactly with starsan and that's when I finally noticed the crack. I'm thinking it was there but I might have made it bigger? I dunno. I don't really ever disassemble these QDs b/c they only ever have fermentation outgassing going through them.

alright - salvaged a gas QD from an assembly I wasn't using any more and swapped them out. hopefully back in full O2 purging business.

seems to be tight now. I completely question when this fermentation started
I'm in the low 60s right now. this fermentation will at least finish up strong.

so after all of the stuff with the fermentation on round 2 of this beer I was concerned but all appears to be well. the fermentation took a little longer than I'm accustomed to (an extra couple of days) but the beer tastes great even before clearing. phew!
eta: oh man this is good! I must really like saaz or something.
