okay this is fairly out there in terms of style (no idea what it is):

10 gallons


18 lb US 2-row
10 lb Maris Otter
1 lb Crystal 40
0.5 lb Carapils Copper
0.25 lb Victory Malt

3.8oz Magnum @ 30 min
2.4oz of Mt. Hood @ 0 min

SRM: 8.4
OG: 1.076
IBU: 66

Ferment on diamond lager

HOIST!


What was your FG? Mine looks like it's just about done fermenting. It's only at 1.018 but it did start at 1.088. It's been 6 days since I started but I don't think I'll get more than a point or two more out of it now.

I won't get near that FG. But if it doesn't drop anymore, I'm at 9.2%. Hope it's not too sweet. Yeast attenuation is at 80%, so I'm close to the 82 on the high end range of the yeast.

It is still bubbling under 15 psi. Not aggressively but still bubbling. Maybe I can squeeze another point or two.

Dry hop for some hop creep? I dry hopped half of mine and it was nice.

Possibly. But it is at least partially carbonated. I'll let it ride another day or so. Maybe I could dry hop more Mandarina Bavarian.

I dry hop while carbonated all the time. You do need to watch out for foaming :)

It is a 10 gallon keg (with 5.5 gallons of beer), so it shouldn't be too bad.

If the fermentation isn't too active yeah. Also be careful if it's warm and you depressurize to quickly. It will foam like there is no tomorrow. I say this as a guy who ferments 10 gallons in a 15.5 gallon vessel :P

Managed to drop another point, down to 1.017. But I doubt I'll squeeze anymore out of it.

It just dawned on me - I didn't scream when I pitched the Lutra. No wonder I only got 80% attenuation. That full 82% would have been nice.

Decided to just chill and transfer. With 9.3% abv, it really shouldn't be overly sweet.

Does alcohol reduce the perception of sweetness? I don't think I've noticed that before but in any event in sure the beer will still be great. I've had a few nights where this beer had nearly gotten the better of me.

agreed there.  it usually takes at least a bit of sugar, minimal specialty malts (crystal, roast, etc.) and a very attenuative yeast for me to bring a high OG beer down close to 1.010.

Another beer I brewed about 5 days ago is another high abv beast. That one started at 1.083. Funny thing is that I didn't mean for it to be so high, I messed up when weighing my grain. Anyway, it's now at 1.010 and I just dry hopped. This beer features Sundew yeast. It's supposed to have a berry flavor. 9.5% Berry Blast!

I transferred the Big Pseudo Lager today. First time doing a pressurized transfer and it went smoothly.

noice.  I use spunding valves on the receiving end so it doesn't go too quickly.

Actually I did too most of the way. I took the SPUNDit off when the weight got a few pounds away from filled. It actually filled quicker than I thought.

Back to my final gravity. I took a sample and it's 1.010! Could have been a couple of things, first, my Tilt stopped working the last 4-5 days (hoping it's just a battery), so maybe it petered out towards the end. Or also Tilt related, my OG wasnt quite as high as 1.088 and my last Tilt reading of 1.017 were both skewed. Either way I have high octane beer.
