Late to the spunding party

I think I finally got this all figured out. I tried it once but I had some leaks and it didn't work right. I have drez's old fermenter in full swing and seems to be working. I put the spunding valve on last night and it seems to be working. Around 2.5psi right now. I have a IPA in there that started at 1.067. it is at 1.019 now. I wasn't completely sure when to put the spunding valve on.

So, do you need a spunding valve on both the fermenter and the keg you're transferring to?

So has anyone experienced a stoppage or slow down of fermenting after putting on the spunding valve? When I checked this beer 24hrs ago it was at 1.019 and its still there. The psi hasn't changed either. When I put the spunding valve on it was still chugging away.

I try not to let the pressure get too high before I feel I am close to the end. I probably have gone higher than I want earlier than intended though and the beers always seem to ferment out.
So just informational but I do use a sounding valve when transferring because I've found with no back pressure I end up with a good amount of head in the keg. Also if I transfer with too little pressure in the fermenter I see foam in the jumper line. Maybe other people have different experienced there and you should do whatever seems to work for you.

Down to 1.018. I figured this would have finished lower. Does the carbonation affect the Tilt reading?

I do not think so.  There is a blog on the Tilt page about pressure fermenting with it.  I would be curious what a hydrometer would read for you.

I will check it out tonight.

I'm also trying to decide when to dry hop this beer. I'm headed out of town tomorrow evening so it's either now or when I get back. I get back on the evening of the 12th and want to be drinking this beer by the 17th. Technically the first DH went in on brew day. So this will be the second. I kind of wanted to push the yeast out beforehand. I can have my buddy come and change temps for me as well. Right now it's at 70. I'm thinking I will give it a few more days and then have him cold crash it. Then when I get back throw in the DH, give it a couple days and keg. Or put DH in now? What do you guys think?

I've tried a lot of different dry hopping schemes and they all seem pretty good to me.  I'd do what is easiest for your process and least likely to impart unwanted O2.

Hydrometer says 1.018.
