Creamy Garlic Chicken

Simple but tasty comfort food. 

 

2 large chicken breasts (or equivalent amount of thighs, or combination) cut into 1.5-2" chunks.

1 TBSP olive oil

2 TBSP butter

1 head of garlic, peeled

1 cup chicken broth/stock

1 tsp lemon juice

1/2 tsp garlic powder

2 cups half and half

 

Season some flour with salt and pepper, dredge the chicken pieces and saute in the olive oil and half the butter in a dutch oven at medium heat until golden brown.

 

Reduce heat and cook the garlic cloves until brown in the remaining butter. Add the chicken broth, lemon juice and garlic powder. Let heat through, then add the half and half and chicken, heat gently until thickened. Add salt and pepper to taste.

 

Serve over rice or orzo and garnish with fresh parsley.
