LHBS wasn't too crazy on pricing. $6/packet. I was expecting it to be worse which is sad. Remember when dry yeast was under $4?
so I'm kind of still holding out hope on this diamond lager getting going. when I lift up the tube on my blowoff bubbles come out. every time I come back and check on it this seems to happen indicating to me that there is some outward flow of gas but maybe I'm crazy.

Spare? 04/05 are my standard and I always have 34/70 around in case the urge to brew just happens.
Mando - give it till morning or late tonight. If nothing then pitch on package of 34/70. What temp do you have it at now? Maybe bump it to 54-55 to get it going and then drop it slowly to 50?

I start to get really worried when I have a lag time that long. I think we have discussed this but I would have used that many packages for 6g. Fingers crossed!
I'm doping a side by side test with Diamond. Split 12 gal. of Vienna lager wort. Pitched 2 packs in one, one in the other, all unrehydrated. The 2 pack started in 24 hours, the 1 pack in 48. Absolutely no difference in the finished beer.

this was just a good full day longer than I've experienced with this yeast which got me a little concerned. You'll note in my other thread that it's possible I have a slightly leaky gas post on my fermentor so it's possible that it started a little earlier than I thought.

Homebrewers have been taught to stress over lag time. There really is no difference between 3 hours and 3 days.

This is true. Longest lag I ever had was 3 days. I don't stress until it hits 72 hours!
