So in typical fashion, I decide to do something last minute. We're having a couple friends over tomorrow. I want to sous vide some country style ribs.

I'd like something more wide/flat and a little more shallow since I just use ziploc bags (need to keep seal out of the water).

I can get those polycarbonate types from Amazon tomorrow, but that's too late. Surprisingly having trouble finding similar on the internet for a local store I can buy from today.

You guys know any retail chains that carry that type of stuff?

Could you use a binder clip to clip the seal to the edge of a Big pot?

I’ve done this in the past for water flow reasons

That's what I do when I haven't vacuum sealed it.  A plastic storage box will work too.

That's what I normally do/use, but not sure it would be best for the amount I'm doing plus the shape of the meat.

Any kind of restaurant supply in your area?

I'll look

That will likely be what I use

5 gallon bucket?  Might work better if you cut it down or find some other way to mount the unit lower in the bucket so you don't need so much water.

ya, some people use open top tubs and throw ping pong balls in to insulate it so the sous vide doesnt' work as hard to maintain temp

Ended up just buying a regular Ole plastic storage container with lid. Got the country style ribs going. Put some liquid smoke on, dry rubbed, and wrapped in bacon. Will sear tomorrow with BBQ sauce and gorge.
