I picked up a Boston butt, and a picnic shoulder today, so I can take the WSM on a test drive with the new mods. I’m going to take the picnic out 24 hours in advance, rinse, pat dry, score the skin and just rub it with sea salt. I’m debating on doing the same to the butt... It’s just me so most of this will get vacuum sealed and frozen. I can eat corn again, and I’m sure they’ll be some other stuff too

Skin the picnic and dehydrate the skin then fry for chicharonne

Local stores have buy one get one ribs, brisket for under two bucks and pork shoulder on sale. Can't decide which way to go

Gonna stop and get some brats and dogs from the butcher. Probably some of their 1/3 lb burger patties too.

Last fourth I did burgers but ground my own meat for the patties. Think I used a mix posted here of brisket, sirloin and some bacon. Best burgers ever

That would be good. With the bacon you could probably still use fairly lean cuts of beef.

I’d rather keep the bacon out of the patties personally. Substitute chuck in the patties. I’ve done it but I like the all beef patty better.

Can you do those ribs surrounded by coolers of ice and cold beer?

I made some ribs on Sunday. Only made one rack. I wish I would have done more, they came out so good. I don’t think I’ll ever not max it out again

The packages we get from Costco have 3 racks so I always do them all.  I have froze them and reheated and they are almost as good as the day I made them.
