Well yeah, still good to eat. I've always read all the smoke flavor accrues in the first 3 hours, but I don't know if that means adding a bit at the end won't add something. You could make history here!

I just finished the Aaron Franklin Master Class on Texas Style BBQ. Basically, it was a class on advertising for his offset smokers, I felt.

I've heard that as well.
