So not exactly to style but I think this will make a nice black lager.

 

10 gallon batch

 

16lbs pils malt

7lbs munich malt

0.5lbs carafoam

0.5lbs carafa spec II

 

mash at 152F

 

1oz Hallertau FWH

1.3oz Magnum @ 30min

1oz Hallertau @ 0min

 

ferment on some reused Diamond Lager

 

I haven't worked out the water yet...

yeah - I kind of realized it's pretty much a black oktoberfest the way I've done it there.

so the water... I decided to try to add less salts this time so I'm using some lactic acid to get the job done.

 

Finished water profile:

 

Ca: 27 ppm

Mg: 3 ppm

Na: 29 ppm

Sulfate: 29 ppm

Chloride: 52 ppm

Bicarb: -10 ppm (not sure what it means when this number is negative :P)

made this today.  I actually shot for a pH of 5.5 b/c I thought bru'n water tended to predict high for me but it turns out bru'n water is pretty much right on.  then I discovered some sources online say a pH of 5.4-5.5 is good for a beer like this.  I guess I'll be fine!

Came out good I think. Tastes basically like Oktoberfest. Still letting the yeast clear up though.

a glass today is way better than yesterday.  i must have been drinking some pretty sludgy stuff (drinking straight from the primary).

 

not as dark as I'd like but I didn't want to add more carafa spec III.

so this looks why lighter than it really is but I wanted the base color to show through so I adjusted the exposure on my phone camera.

 

reality is a really dark red/rust color.
