I am wondering about your cinnamon sticks. Do you think 2 will be enough? Whenever I make apple pie the drink I use 5 sticks for about 1.5gal. and that's boiling them.  But I don't have any experience putting them in a beer as a DH.

I have zero Idea to be honest.  I have debated back and for the about a wp stick or two.  I also wonder about powder but I worry that may be grainy.  I assume there will be some trial and error here.

I think I would definitely stay away from powder. I think I would try a stick in the WP. Then DH with another 2 and after a few days try it and go from there. You can always throw in another stick or 2.

I did a bit of looking after my last post and I think you are right about the WP.  I may do one or 1.5 in the wp and then do another 2 and the vanilla once fermentation is almost done.  I will soak them in vodka or bourbon to help get some extraction going.  This will be in the flex so sampling will be easy and I can carbonate as it conditions.

Sounds like a plan. I did see your post about the flex, looks nice! I looked and it doesn't look like they make it in 14gal. I wouldn't mind finding something affordable that's SS and 14gal., doesn't have to be a conical.

I brewed mine last Saturday and I did 2 sticks in the mash and 2 in the whirlpool.  Just added some bourbon, cinnamon sticks and vanilla to the fermenter.  Took a sample too.

How is the cinnamon level before you added today? You brewed Saturday and are already carbing? So you carb in the fermenter and then transfer to keg?

You can tell there is cinnamon in there but it is not strong. I think more wp next time.

Fermentation was slowing this morning so I bunged up the fermenter. It looks more carbonated than it really is. It will be half carbonated before I keg.

That goes to my keg to CO2 purge. When I start I have that hose go to the "beer out" on the keg and the "gas in" has a hose that goes to a bucket of starsan. As fermentation slows I just pop off the hose on the "gas in" and keep the keg pressurized as the beer carbonates. I can also use that manifold to force carbonate or purge the fermenter. When I dryhop I flow in CO2 through it.

Interesting. I definitely need to adapt some new practices in this area. When I was kegging today I kept thinking I needed to change something. I also need to fix the issue when I cold crash it wants to suck the starsan into the fermenter.
