So Ken, you told me my next assignment was to figure out what I was going to do with the blob of 34/70 I'll have. I'm thinking Dunkel... any thoughts/advice appreciated.

 

8 lbs 8.0 oz Munich (BESTMALZ)
1 lbs Barke Pilsner (Weyermann)
12.0 oz Melanoidin (Weyermann)
4.0 oz Carafa III (Weyermann)

 

mash around 152 ºF for 60+ min

Perle at 60 and 5 mins to get me to about 23 IBU
Blob 34/70

 

hoping for an OG of 1.053 and FG of 1.012

Looks pretty solid to me.  

 

I have a slurry of 940 coming up and was contemplating a Dunkel too but I am moving to something short of that but similar in a way; Amber Lager.  Pretty straight forward recipe like yours.

Personally I don't know that that much melanoidin is needed with that the Munich.

That's just personal taste though.

if you leave it in I would go to 4oz personally.

 

Melanoidin malt was one that I recently dumped out 4#'s of because I found I just do not need it.  My dunkel is a bit different though:

54% Dark Munich

42% Pilsner

2% Midnight Wheat

2% Acid malt

ok good advice, thanks... yeah I generally add acid malt to all my beers just because of my water...

I haven't made one in awhile but I like the recipe I have used.  Looks like I did about 66% Munich 2, 33% Pilsner malt, three ounces of Carafa III.  20 IBUs of Hallertau from the start of the boil and then a smidge of Halllertau again with 10 or 15 minutes left although that addition is probably not necessary and open to personal preference.  On the yeast I would say that Omega Bayern is #1 and 2308/838 is #2.  Click below, go to RECIPES and scroll down to Dunkel.  It's clearly not the ONLY way but it came out really, really nice.  Simplicity is a big part of German recipes.

Ken, I ended up at about 60% Munich, 33% Pils, 3.5% Melanoidin, 3.5% dehusked Carafa III, hopped at 60 and 15 min to about 23 IBU. Original gravity 13 ºP, temperature outside while brewing, about 13 ºF. Used a blue solo cup full of 34/70.

Shit! You should only use red solo cups for yeast. Sorry, send the beer to me for proper disposal.

I think the amount of melanoidoin should be zero.

I agree I wouldn't use it here but if I did it would be a small amount.  some people like it.

I think your beer will turn out well but I also think that over time you may find that recipes can be simplified... especially German recipes.  Some of my favorite recipes have two grains and one hop.  No need for layers and layers of flavors in some of these beers.  With a beer that has so much munich in it, I can't see a need for the melanoidin.  Keep us posted on how it comes out and cheers to you.

I had plans for one this weekend with Bayern but a damn cold has me down. Hoping to get to it this weekend so I can have it ready for my son's birthday party on March 14th. Cutting it close.
