Among my favorites in this order; Experimental, Beer and Brewing and the new Drink Beer Think Beer by John Holl. 

 

This week he is covering the clever duo Bill Eye and Ashleigh Carter at Bierstadt Lager House in Denver.  My whole point is that when I listen to these two talk about Lagers, that becomes all I want to make.  Slow pour Pils and Helles.  I must try my hand at a Helles.  Pretty sure they've been on Denny and Drew's show too.  Give them a listen folks.

I have been liking his new one too, John Holl that is.  I want to plan a trip to Denver just to go to Bierstadt!

 

I also listen to Good Beer Hunting and Steal this Beer with John Hall and Augie Carton.  Granted, StB is a shit show because they are drinking and Augie tends to go off topic but I find that kind of podcast enjoyable at times.

I'll join you in Denver.  I too listen to StB and couldn't agree more about Augie.  Sometimes I end the show early just because of the rhetoric.  It's like a car crash however haha

Mmm, I have been to Denver multiple times recently because my son goes to CU in Boulder.  I really need to check out Bierstadt... thanks for the mention.  Poptop, I know what you mean... you hear (or see) a show about something and all you want to do is push everything else aside and make a similar beer.  I watched something not long ago about a brewery in the UK (Bristol something or other) and they were in this old-school brewery with brick on the wall and cement floors and they were making BPA, ESBs, etc. and it really got my juices flowing.  A podcast on helles would probably do the same.  You have never made a helles?  Using your beloved 34/70 or Bayern would create a righteous helles.  95/5 pils/carahell or 90/10 pils/Munich 1 along with 20ish IBUs at the start of the boil plus the suitable yeast of your choice... those are two I have tried.  Do your best to exercise self-control and don't add any more hops.  I have water numbers somewhere too if you're interested.  I'm going to give that lager podcast a listen.  Thanks.

Ken, I love the simplicity of both recipe designs and from all I've read and listened to, malt should be present and hops restrained.  Bierstadt's Ashleigh Carter suggest: 88% Barke Pils, 8% Vienna and 4% Acid malt, with 20IBU of Hallertau or similar.  So your designs are pretty relevant.

 

This one really got the juices moving for Pils and Helles.  Great listen.

I was digging the Paulaner Original Munich Lager which I was getting in tall cans...

A little homework told me it was 90/10 Pils/Munich 1 (I used Barke because I had it) and then 20 IBUs of Hallertau Tradition which I don't ordinarily have but I ordered it specifically for this.  I used 2124 and then I made it again recently with Diamond and it's about to be sent to a keg.  Simple.  Balanced.  Delicious.  My daughter was here over Thanksgiving and again over Christmas and she was drinking it.  She commented on how pale it was but she kept asking me "what kind of beer is this?" and I told her that if she's out somewhere and sees "helles" or "hell" to give it a try but also not to get too excited because many US craft breweries don't really make it properly... A Munich helles that's dry hopped with Citra!!  :lol:  <_<

Certainly seems so.  His show is now part of my library just like you's two.  Denny, did you do a bit with Bill and Ashleigh?

Not that I recall, but after almost 200 shows I'm not certain.
