best recipe for cascade/willy?

what should I do here?  I'd like to either use 2-row or GP for the base.  yeast will be BRY-97.

 

can a beer like this be pretty pale or do I need a bit of crystal (40 or 60)?

I would add a touch of c60 myself.

I'm thinking if I use C60 I should probably go with 2-row?  I dunno.  I have a lot of GP now :lol:.  nearly 100lbs.  I just can't stop myself from buying it but then I get stingy when it comes to using it.

Cascade/willy screams classic west coast ipa/apa so I would go two row and 5-8% crystal. Save the gp for NEIPAs!

1-2# Wheat malt (for head retention, of course!)

8oz. Light Carastan or Caravienne or other favorite 15-20L crystal

4oz. Victory

 

Clean bittering hop @ 60

1oz. each Cascade/Willy @10

1oz. each Cascade/Willy @0

 

1450/1056

So I'm away from my brewing spreadsheet right now but I'm thinking of a ten gallon recipe.

OG: 1.055
SRM: whatever it is
IBU: 45

? Lbs CMC 2-row
0.5 lbs briess Crystal 60 (assuming I have some, otherwise might use Crystal 40)
1.0 lbs carapils copper

Sulfate around 150 ppm
Chloride around 50 ppm
These are guesses but I'll go for something closer to this at any rate.

Mash at 153F for one hour

? oz Magnum or Galena or nugget at 30 mins
3oz Cascade/Willamette (2:1 ratio) at 5 minutes
6oz Cascade/Willamette (2:1 ratio) at 0 minutes

Ferment with bry-97

Dry hop as fermentation slows down in primary.

4oz Cascade
2oz Willamette

Let hops work for 3 days, chill for a few days, keg.
Too much hops? I'm looking at it realizing I'll be using quite a bit!

15oz for a 10g batch does not seem that much to me at all.

Is that a typical Cascade to Willy ratio? I can't remember what most people do.

I typically do 1:1 but I do not see a problem with 2:1.

Hmmmm, I might adjust the boil additions to be 1:1 and keep the dry hop as is.

my suspicions were correct.  no C60!   I do have C40 and C80 as well as caravienne.  Might do a combo of C40 and C80.  more of the former than the latter.

1.75oz galena @ 30

1.5oz willy @ 5

1.5oz cascade @ 5

3oz willy @ 0

3oz cascade @ 0

that is the color.  flavor wise I'd say it's not nearly as intense as say, 30L crystal.  it just adds a little toasty aspect that regular carapils does not.  I like it for stuff like this.  I once even used half a pound (10 gal batch) in a pilsner because I ran out of regular carapils and it didn't hurt that beer at all.  came out great!
