Hops I Need Some. Help Me Select

If you don't like 'fruity pebbles' hops that create a lot of citrus or you don't want to go that way, stay away from Amarillo, Citra, Galaxy and Mosaic.  Probably some others too.  There are lot of sites that will tell you what certain hops are like.  If you like "clean, herbal, floral" hops (Mt. Hood is a good example) then you would also like Crystal, Liberty, Loral, Santiam, Ultra, Glacier, Styrian Golding, Vanguard and a number of others.  The issue with the explosion of hops is that there are only so many batches for you to make and so many hops you can try.  Then someone will tell you that the hops you bought smell and taste like a hippie's armpit or else they smell like onion and garlic.  So either check out hop sites for descriptions or else head to a brewpub and taste someone else's craft beer and see what you like.  Simcoe is popular and more "woody" than fruity.  Nelson is supposed to have a sort of white wine character.  I used it a few times and moved on.  More responses are on the way...

you are saying it isn't citrusy?  I generally would notice some distinct orange like aromas from it at least early on after dry hopping.  it's always faded very quickly in my beers though.  not sure if that is just my brewery.

I think you are mixing it up with cascade.  amarillo is def orange.

 

eta:  I guess some people think grapefruit??  it's so clearly orange to me I don't know that my brain can be changed :P

I would say Amarillo is citrusy but not "fruity pebbles."  The others you list like citra and galaxy while fruity have sweetness to them, to me at least. I find that much different than the straight citrus like characteristics I get from Amarillo.

I'm not sure what fruity pebbles taste like anymore :P

 

I had a beer yesterday with hops I've never had that was like tropical fruit punch!

Citrusy, yes, but I get lemon/lime from it. not the tutti fruity flavor Ken alluded to.

FWIW, I'm not a fan of Citra (for example) used alone or in large amounts.  But toss some Chinook in there, too, and I'm all over it.

indeed Chinook is an often overlooked but great hop, I won a blue ribbon at the fair this year with a very clean simple APA that was just Great Western 2-row, Simpson's medium Crystal, US-05, Chinook and Cascade, including a FWH and Whirlpool hop all Chinook. only judging knock was my carbonation didn't carry over as well as I'd like from keg filling.

I "grew up" using Chinook and still use it often. Some friends in MI sent me so e Chinnok grown there. While here in the PNW Chinook has a dank, piney character, the MI Chinook is heavy pineapple. Terroir.

I have heard that about the MI Chinook, I need to order some and try.  Chinook and Simcoe have been my two favorite hops for a long time. That is how I came up with my chinook/citra beer because I was told the blend would mimic Simcoe.  Not sure it really does but turns out a killer beer.

I usually mix in citra with those two.

 

I once made a porter with lots of chinook mixed with columbus.  I really enjoyed that one.  looking at the recipe now I'm kind of surprised that I put a pound of C60 and 2lbs of various roasted grains (10 gallon batch)  and still managed to hit a pretty low FG of 1.012.
