why is there sometimes condensation in my bag of CaCl?

Sometimes it's there and the little balls of CaCl stick to it when I'm pouring some out.  What's the deal with that?  Is this a problem?

I do not think it is a problem.  I have not experienced it with my tub of Ball Pickle Crisps but since CaCl is hygroscopic it will attract moisture.

this is just a plastic bag that I fold shut and put a clip on so much less air tight than your jar I'm guessing.

Yup, I would try putting the bag in a mason jar and see if the issue is resolved.

I've always kept mine in the freezer because it's very low humidity. CaCl will absorb significant moisture and throw off your usage. I've oven dried CaCl that i had stored in a plastic bag and IIRC it gave up 50% of its weight.

It's very hygroscopic, it's the chemical used in Damp Rid™ if you don't seal it tight, your bag of Chloride is just a bag of dehumidifier.

Years ago I bought a new bag of CaCl flakes and that same day I was weighing it out while I was outside brewing.  It was the height of summer and very hot and humid.  The CaCl literally turned into a paste just in the course of the few minutes it took to weigh it out.  That was when I started keeping it int he freezer.

Put it in the oven on the lowest setting for an hour then repackage and put it in the freezer.  I used to weigh the bag when I put it away and weigh it again when I took it out to use again to see if it had picked up moisture.  The pickling granules seem to be more stable for whatever reason.  Maybe they use a moisture resistant layer in the jar.
