Farro salad

This is a really good summer meal salad that my wife made up.

 

2 cups dry farro, cooked according to package instructions (farro is an "ancient grain", kinda like barley, with a nutty flavor and     substantial, chewy texture). 

 

8 oz cherry or grape tomatoes, halved

1 bell pepper, chopped (we use red or yellow)

1 avocado, chopped

6 oz crumbled feta cheese

Half package of frozen edamame, cooked (or we've used 1 cup chopped walnuts if we don't have the edamame, or some combo of the two)

 

Dressing

 

Juice of one lemon

~1/2 cup olive oil

One clove of garlic, minced

Fresh herbs (what you have on hand, we had chives, basil and parsley)

Salt and pepper to taste

 

Mix all ingredients in a large bowl. It's good served warm-ish if you just cooked the farro, or cold. Super easy healthy one dish meal.

Made this tonight. Excellent. No brainer as I had garlic, basil, parsley, cherry tomatoes, and beans (green pole beans) all waiting in the garden. Well done Mrs. Porter.
