Wouldn't the pH be the same whether it was a gallon of water or 5 gallons of water?

Not once you start to steep the grains. The thinner your "mash" the higher your pH will be.

I didn't see it in this thread but is there any advice for how to treat water for extract batches? Should gypsum or cacl be added simply with regards to hitting the desired sulfate and chloride levels for the beer in question? Does an extract Brewer need to be very careful about the pH of the wort?

You don't treat water for extract batches.  The extract was produced with all the minerals needed. Untreated distilled water is perfect for extract batches.

I treated for mouthfeel and accentuating the hops. Distilled will not give me what I want.

this doesn't quite track with how I brew AG.  yes I treat my water to hit the right mash pH but just like you probably do I also plan on what my sulfate and chloride levels will be like.  I'm going to guess that extract was made to be fairly neutral or minimal in terms of sulfate and chloride so if you wanted more of that in your beer wouldn't you need to add it?
