Big thanks to Darterboy for pointing me to Sam the Cooking Guy on Youtube.  He may be my new cooking hero; we'll have to see how Good Eats: The Return goes.  His cooking style (Feck the purists, does it taste good?) is a perfect match for mine.  There are seven years of videos, from 20-40 minutes long, on his channel.  I'm watching them newest to oldest because it takes five minutes to scroll to the bottom of the list on my TV.  So far I've got two things lined up to make, the chicken enchiladas that started it all and jerk chicken.

I made jerk chicken out of the Food Lab book and it changed my freaking life. I think it was food lab. Changed my life so hard, I forgot stuff.

I love the STCG show. I found it about 4 months ago and I've been hooked. Its changed the way I cook and given me all sorts of new ideas.

possible to not use scotch bonnet peppers? those might kill me.

oh yeah. I actually subbed out like jalepenos or something because i couldn't find scotch bonnet. They do offer something to flavor, but it's the allspice and the soy sauce and just all that other stuff that really pop in this recipe.

going to one day ship a pound of all spice berries from amazon and get the rest of the stuff I don't have today.

you can't just wave jerk chicken in front my face like that and expect me not to act.

 

just curious - how did the putting the bay leaves and berries on the grilling surface go?  It seems like they'd all just fall through.  did you put down aluminum foil or something?

already called wifey to get some scotch bonnet peppers in the garden ASAP, gonna be tough to find around here, may have to go to local mexican grocery to find em.

 

and have also added some allspice in the amazon cart along with additional bay leaf

hmmm - I don't have anything like that.  I'll probably just put down a layer of foil so I don't lose all of that stuff.

I just bought some habs.  I know they aren't quite the same but the lower heat means I can actually put a couple in and not kill myself :P

I've also liking It's Alive with Brad on Bon Appetit's channel. His schtick is generally fermented foods/ingredients and usually entertaining.
