Got a new sack of Munton's MO to work on, so next week, this is what I'm thinking of tossing in the mash tun:

 

5lb Maris Otter

5lb pils

2lb Munich

0.5lb C-30

0.5lb wheat

 

0.5lb cane sugar (to be added to the 1° on day 4, as a staggered addition), to help dry the beer out.

 

Magnum (whole) to ~45 IBUs for 90 min

EKG (pellet) to ~20-25 IBUs, in 3 x 1oz additions at 10 min, 5 min, and a 20-min hopstand

 

Shooting for ~1.075 or so, for 5.5 gal in the primary.

 

US-05 will handle the heavy lifting in the primary.  If this batch turns out ok/well/great, then future batches will employ a proper Brit strain, likely 1028.

 

This batch is meant to get a read on the Maris Otter character as a base malt, as I've not used it before now.

If you don't mind the us-05 will make a nice hybrid beer. If you want something more authentic I think you've gotta use British yeast. Just my opinion. I've made beers using ekg and American yeast and they are quite tasty.

Looks like I'll be able to make this beer more English-inspired than I thought.

 

Looked in my lagering fridge a few minutes ago, to check on my stash of dried yeast (US-05 and 34/70).  As it turns out, I have a spare packet of Munton's Gold yeast (not expired yet) that I had forgotten I had, so that will get the nod in lieu of US-05.

 

Ought to be a nice trip down memory lane; used MG a lot in my early/extract kit days, and i recall that MG turned out some nice beers for me.

I think you would enjoy the character you get from one of the great British strains like 1028, 1968, 1099, 1469 and a bunch of others.  1099 Whitbread is one of my favorites with that minerally & bready character and it flocs like crazy too.  1968 is a high-floccer too.  When I get bored with 1056/001/West Coast I will look to see which English strain is available and make a few English-inspired beers (ESB, ordinary bitter, EPA, etc) and maybe some american styles too like red ale, amber or blonde.  The strains are still super neutral but have just a little more going on... in a good way.  Couple that with some good MO or GP and fresh English hops like EKG and I can hear the Benny Hill music now...  :lol:

May have to stick w/ US-05 after all for this upcoming batch; double-checked the date on the MG packet this morning while doing some beer chores, and it actually said best by 7/2018, not 2019 as I thought it said yesterday.

 

Not the end of the world, but I'm not keen on risking an entire batch on a yeast packet a year past its best-by date.

honestly I think it will still be enjoyable.  in the past I've made beers that were intentionally a hybrid of english and US and they were great.  I did a mix of EKG with cascade and centennial and then split the 10 gallons and fermented half with us-05 and half with s-04.  from what I remember there was no clear winner based overall.  some people preferred one and some the other.  I don't think anyone disliked either.
