I have 1/2 a bucket of wheat malt, about 32# worth, and I'd like to use it up, but how much beer would this much make? I think it's about 2.5 gallons, but all the recipes I see use 7# of GRAIN to MAKE the malt. This is from a purchase a few years back, but thanks to my conspicuous sanitary actions, it's still good, amber & sweet. In addition, I have a brand new 55Gallon tank, so making a larger portion of beer would actually be a good thing.Suggestions? Up-scaled recipes? Warnings? (no, the tank's not see-through, so I'll have to resort to a spirit-stealer or whatever it's called to draw some from different levels of the tank.As always, you help is preferred. (I have a source for pound of Tetteneger hops [my favorite]... or any other hops in bulk, so the choices of brew are unlimited, so long as we can get it all used @ once! Thanks everyone!Scott https://i37.tinypic.com/qmxl68.jpghttps://i36.tinypic.com/whxtux.jpg

I guess my first question is what exactly is the composition of the malt? Is it 100% wheat, or is it 50/50 wheat/barley?

Uh, that stuff is probably oxidized all to hell. Whatever you make, don't waste much hops on it, cause it may turn out really bad. Grab some cheap dry yeast and brew a few gallon batch of the straight malt extract, maybe 1.045, with about an ounce of 5% hops. See how it tastes. If it's awful, you may just want to pitch the rest or make starter wort with it.

Kind of what I was thinking, but if it was stored in deep freeze under nitrogen it may be okay

I missed the part where he said it was still good. Still, I wouldn't make a huge batch with it right off. Make like a 1 or 2 gallon batch, just to make sure.

I think this is beer that I would make for "friends" who come over and want to drink your beer. Not your real "good friends", but you know... guys who just want to mooch some booze off of you. I'm thinking you could have several cases of the stuff on hand. That being said, it's just plain fun to brew and if you've got that amount of extract on hand... go for it. I agree on light hop usage. Make this a malty beer.Oh... and might as well can some starter wort (assuming you have capabilities to safely can and store).

I got some free 50/50 wheat liquid malt extract that was 28 months old according to the date stamp. It was at a big brew, the brewshop found an unpen 33 gallon barrel. He knew he couldn't sell it so he gave it away. I ended up making 10 gallons of wheat 95 US and 5 german) the beers ended up being darker than expected and oxidized close to undrinkable. So throwing good money after bad I put them both on raz berries. They both ended up drinkable but neither one was great, the american was better than the german because it wasn't as many compeating flavors.

Just mix it up with some warm water, ferment it with super yeast, then run it through a "purifier".
