I'm working on a Belgian Tripel clone (Victory's Golden Monkey) in which the original is heavy on the coriander. My gravity samples (3 wks in) have tasted light on the coriander (I crushed whole coriander with a rolling pin - I'm not sure I got it fine enough). Is coriander a spice that will intensify as the beer ages, or something I need to get right now?I'm thinking about adding a bit (1/2 tsp, maybe) as I transfer to secondary. Should I?

My experience is that it will reduce in intensity over time.

Coriander aroma and flavor will tend to reduce over time in my experience. You can certainly add more in secondary. How much did you add orginally and when? I will typically add during the last 5 minutes of the boil.

Assuming the gravity samples had little to no CO2 in them, you may get more coriander aroma when its carbed. Maybe not though.

Thanks for the replies.I added 2 tbsp of poorly grounded fresh coriander. I'm thinking about going with 1/2 - 1 tsp. of ground coriander with the transfer into secondary.

I don't believe Golden Monkey has any corriander, it's a tripel not a wit. I've brewed with corriander and have had Golden Monkey and it is not in there. From there site: https://www.victoryb...den_monkey.aspx as you can see no corriander. The yeast throws off the spice, oh yeah and the answer is weaker in time.

I'm pretty confident that Golden Monkey is a spiced Tripel.Just my 1/50th USD, though...

It's been awhile since I had one, but I remember a real strong spice, which I later figured was coriander. (Denny's clone recipe includes it.) Sounds like a good excuse to stop by the brewery for a taste!
