Something I've only recently come to realize...

 

I like my stouts highly carbonated and then poured hard so they decarb.  it tastes better than a lower carbonation level and a "normal" pour.  Why is that?

I'm assuming it's something similar to what happens with a Stout faucet or a can widget but I'm not sure.

I carb them normal, then knock out some of it in the pour.  It can help to get a big vet syringe or meat injector, draw a little beer into it, then double with air, then inject into the beer hard.  This will cause a nitro style cascade.

That's exactly what happens when a stout is served on nitro.
