007 starter is cranking away right now and I'm measuring out malt.

 

16lbs pils

2lbs MO

1lbs carapils

 

bitter with motueka @ 30min

finish with a little motueka, czech saaz and hallertau

shooting for around 38 IBUs

lowish mineral content overall (sulfate and chloride around 70ppm) - lactic acid is doing a lot of the heavy lifting this time.

We have entered the fart stage of the fermentation. In general this is going a little slower than I'm used to. Lag time was probably about 36 hours. Brewed on Friday and it's still outgassing at a pretty good rate. I'm carefully monitoring so I can start raising the temperature and put the founding valve on.

I can't decide if I want to make 10 more gallons or 20 (2 10 gallon batches). Would it be better to save 2 Mason jars from this batch and save one for later (make a starter) or to just save one jar, make 10 gallons and then harvest from that batch?

Use that yeast as fresh as possible. If you’re going to do two batches right away, split it up. Other you’d be better off harvesting from the first batch. My $.02 anyway

I'm really hoping that beer #2 with this yeast is as good as beer #1 b/c beer #1 is fantastic!  something so beery about it.

I think it might be but it's a little soon to tell right now (only a little over a week since I brewed it).  as of now it is kind of like a darker colored oktoberest.  a little more malty than I expected but that might change.

I will be brewing with this yeast soon and I'm thinking "premium yeast" all the way and thought I should have some premium malt to use as well. I was thinking Barke Pils was the call. I contacted my local supply house (small place, great people but not a lot of bulk stuff available). She got back to me and said she would sell me a sack of the Barke Pils for $64 which I consider a steal. Headed over there now to pick it up.

I was talking to the woman who runs the place and she said, "You can tell the difference in this stuff just by chewing some of it and then trying the regular Weyermann pilsner malt.  It's a very stark difference".  She also told me that the next best pilsner malt she's tried is Belgian Chateau Pilsner... I have not tried it.

It's not surprising.  It's got the word Belgian in it hahaha hee hee

castle chocolate malt is def a step above other chocolate malts so I'm not surprised.
