Fear the Walking Dead Beer

On Fear the Walking Dead last night, they killed off Jim the brewer, but before he went, he dictated his special beer recipe so that it could live on and maybe help re-establish civilization. Here's the recipe he gave:

 

68% Pils Malt

15% Wheat Malt

7% Flaked Oats

10% Vienna Malt

 

20 grams Slovenian Pellets

70 grams Czech Saaz

 

Belgian AND French Saison Yeast

 

Mash @ 151-152°F

 

Ferment @ 68°F for 10 days, no less

 

Then he whispered some "secret" instructions that he said was the most important part and nobody else could know...

 

First problem... No recipe volume. Hop amounts look about right for 5 gallons.

 

Second... no hopping schedule (maybe that was the secret?) 

 

Kind of odd that he'd specify pellets for one hop and whole for the other. Also, "Slovenian" identifies a growing region, not a variety (maybe Styrian Golding? Probably the most popular Slovenian hop...)

 

Impressively, he actually pronounced Saas correctly (it's closer to "Zots" than "Saws"

 

At the end of the show, the survivors gave the beer a stupid name that they knew Jim would hate: Jimbo's Beerbos... (I can attest that most "Jim's" hate the nickname "Jimbo".

 

So, what do you all think the "secret" was? I think it was to age it in bourbon barrels, because it looks like a pretty pedestrian brew to me, as is...

Pretty specific ingredients for the scarcity of food. Its a farmhouse ale, its what you want it to be by taste.
