Am Wheat in the morning.  I want to knock the wort down to 170df (or should I go lower?) for the only hop addition.  10 gallon batch - 5oz of 12.3 AA Citra pellets.  Any idea on how long to it set after whirlpooling?

I've never done it as the only hop addition but it seemed like 20-30 minutes was being knocked around as a good timeframe.  After tasting some of Drez's beers this past weekend, I came to the conclusion that the only hops were late and that there were a lot of them.  The result was ultra-smooth beer with a juicy-hop character.  Are you going to drop the temp from 212 to 170, add the hops and then let them steep (hopstand)? or continue to chill?  Seems like there are multiple ways to do this and I'm probably not the best to reply because my experience is limited... but I'd like to hear your results.

The plan at this point is knock it down with the IC, add hops, whirlpool and rest  Then run through the plate chiller and post chiller.

Yeah, that sounds great and I have done the same but with IC in both cases.  But I've never done it with those WP hops being the only hops.  Technically that would be a ZERO IBU beer, correct?

I would think some bittering will still happen.  What I really want though is flavor and aroma

I have gone 180 for 30 minutes as my only kettle addition a few times. I think 3 oz for 6 gallons. I think those beers have been some of my best. Smooth bitterness with a great aroma and flavor.

You will get some ibu depending on time and temp. I would guess mine were about 15-20.

Would anyone care to write up a quick recipe for 5 gallons?  Which grains?  If I used something like Citra, how many ounces to get a good, soft & juicy hop character?  At what point in the WP, how long to let it sit, etc?  I guess I'm thinking a mix of pale ale malt and wheat and then 5 ounces (ish?) of Citra into the WP.

Sweet.  I would hate to interrupt beach time.  I'm leaving for Boulder early tomorrow morning and won't be back until mid-next week but I am going to be firing up some 1028 for some ales and I would totally do something like this but... I would need a bit of direction because I've never tried it.  I would probably go to my local and pick up more Citra but for the moment I have 2 ounces of Citra and another 2 of Amarillo plus 2 ounces of Ella, Lemon Drop and El Dorado.  I could see Galaxy working too.

So here it is.  If you Brew it brew it as is and trust me :)  The Warthog Wheat is just a type of white wheat and carapils copper can be subbed out the carapils.  I have done it with both and like the copper for the color but the final beer is fine with out it.  Just trust the hop additions!! Oh and the yeast was not WLP066 it was my blend of S-05 and S-04.  Dumped both on the work and let it go at 66 for 4 hours then added the dry hop #1 and pumped it to 68 then after another day to 70.  I do a cold crash at the end.

I like it with something where it does not dominate.  I do not like it as the only addition but with something else it can work well.  It is very fruity to me so I like it with hops that have a bit of dank or rough edge to them.  I got it for like 8 bucks a pounds so I had to try it.  It works really well with this blend.  If you sub citra for mosaic you have the same hop blend that goes into Exhibit "A" Cat's Meow, one of the localish IPAs I really like.

ETA: Try this recipe .. I think you will like it.

I'd have to adapt the grain bill a little bit (MO instead of GP b/c I don't currently have GP) but it looks good

eta:  well, I'd also have to get some el dorado.  might be able to get it pretty cheap right now if it's available.  I'm also out of columbus so I'll have to pay attention for deals.  I should make a hop wish list b/c a few times in the past year I kind of wished I had magnum on hand.

eta2: looks like I should probably get magnum, columbus, el dorado, citra on my next order.
