This plant has gone crazy. We have way more that we can use before the first freeze.  Besides a little cilantro flavor it has some citrus too.  Works nicely with most Mexican/Tex-Mex stuff we have tried so far.

 

I think I need to try it with a masa/poblano beer that I have considered a success in the past.  I doubt anyone has used it in beer much less cooking but thought I would throw this out there.

I've been  sporadically using masa for a few years.  Usually around 20% or less.  It can make sparging/lautering tough sometimes since most around here is ground so fine.  It converts fine for me with American malts.  The poblano IIRC is usually put in late in the boil.  Cut up a bit and in a wire basket.  Fun  beer to have in warm weather or with Mex/ Tex-Mex food.

 

Cornmeal is less of a problem with my setup - sparging.  I like the taste of it too but masa just gives it a little extra that I like.

Try Johnny's seed company.  They have it in stock now, although it's probably too late for your neck of the woods.  It's a good alternative to cilantro, which tries to bolt late June/early July and is by now withered around here.

I’m well aware of the herb and it’s character. I made a thread about it last year, pretty sure that’s where DJ heard of it ;) Maybe not tho. I got it as a little baby plant at the farmers market, maybe next year I’ll remember to get seeds and sprout it

Yeah, you turned me on to it.  I have a huge 4+ foot plant.  It's so potent that it's hard to use all of it.  I'm sure we'll deal with it with a chamber vac and dehydrator.  Meanwhile I need to dose some masa poblano beer I have to get an idea before brewing with it.
