Just made a batch of these; absolutely killer on a salad:

 

Ingredients:

 

4-6 slices of bread (white, wheat, rye, all work well), sliced into 1-1.5" cubes

 

EVOO (I use ~1 TBS for every 2 slices of bread; use more or less as you like)

 

Seasonings:

 

Salt - ~1 tsp

 

Garlic powder- ~1/8-1/4 tsp, to taste

 

Onion powder - ~1/4 tsp

 

Parsley - ~1 TBS

 

Directions:

 

- Preheat oven to 300°.

 

- Whisk oil and seasonings together in a bowl; let sit while oven preheats and bread is prepped.

 

- In a large bowl, add cubed bread and drizzle EVOO/seasonings over, (you might need to scrape the bowl, as the seasonings tend to settle out), and toss the bread cubes thoroughly.

 

- On a rimmed baking sheet, line w/ parchment, spread seasoned bread cubes out in single layer, and bake for 40 minutes (middle rack, center, of oven).

 

- Once baked, let cool, then store in a freezer bag or an airtight container.

 

These will keep for about a week, assuming they last that long. :P :D

I use fresh bread, and the resulting croutons turn out nicely crispy.

 

I've not used stale bread for croutons, so I can't offer any input there.
