Last night I sent my "American Premium" (Bayern #1) from primary to keg.  It was brewed 13 days ago.  There is usually some amount of yeast and schputz that goes through the closed transfer because I almost always get some additional junk into the primary on brewday.  On this one, I opened the port and got one tiny blob of yeast that looked like it was followed by crystal-clear beer.  I was amazed.  When the transfer was done I popped the top on the primary to harvest the yeast and I got a nice amount of ultra-white slurry.  I have no idea how I did that (nothing process-wise was changed) but I expect this beer to be great and I expect the yeast (to be used tomorrow in the pale vienna) to be ready to roll.
