I usually make my lunch for the week over the weekend. This week I'm thinking of some grilled chicken mixed in a salad.
I found this recipe where you make a dressing with pureed avocado. anyone done this?
I won't be following this exactly. I'll probably use a fresh jalepeno for spice since I have some growing right out in the yard. I also don't have an onion or the sweet potato part so those are out. I figured I could do a similar chicken marinade and dressing with whatever salad stuff I've got (spring mix, peppers, cukes, maters, etc.). I'm open to suggestions though. I'll be using boneless/skinless thighs. I have 4 avocados and bunch of limes. also I have cilantro growing outside whether I want it or not now. that shit is like a weed!
