being this time of the year and the cider projects getting started, i thought i'd throw a recipe in:roasted pork tenderloin with cider2 pork loins about 2 lbs total12 ounces favorite hard cideri medium onion diced1 tart apple peeled and diced1 cup diced winter squash1/2 tsp ginger1/2 tsp cinnamondash of ground pepper1 Tbl oilin a cast iron skillet sear the pork on both sides in the oilremove and add cider to skillet, reduce about 5 min. scrapping the goodies in the panadd the onions apple and squash, stir in the spicesput the loins back in the skillet on top of the apples and squashput the lid on and bake in the oven at 350 for 25 min or until pork is 160 degreesset aside to rest about 5 min.

Oh yes, cider and pork is yummy. Cyser works extremely well too. My wife does something with pork steaks where she cooks them for an hour in a pint of cyser, then makes a sauce out of the drippings. :cheers: :rolf: :facepalm:
