Sounds like you're the BFBT point man on this one.

A look at their website says you can brew pretty much any German lager style with it.

I'd say the sky's the limit; what ingredients do you have on hand, and what do you feel like making?

I have just about everything on hand grain-wise and I have a lot of hops as well. I have 2124 running right now in that Big Bark clone so it seems kind of silly to fire up this Diamond especially if it's actually dried 2124 (which seems possible based on various things I found). The next three beers I was going to make with the 2124 were: A Caribbean Lager (very pale, light and poundable), something I drew up to get me close to this Paulaner Original Munich Lager (I know I'm optimistic) and also the Paulaner Oktoberfest Marzen.

It turned out to be a stellar day here so I had an epiphany:  Drink beer instead of make beer.   But some day I will try this Diamond yeast and report back.

I've got a bunch of friends at Lallemand I'll see next week.  I'll see if I can get any info.

I talked to a microbiologist at Lallemand yeast.  All she would say is that it's a Weinstephan strain. I don't think that's new to anyone.  They're sending me some to play with.  I'd love to hear other people's thoughts when you use it.

does weinstephan have more than one lager strain of yeast?  I figured there was just one.

The info may be dated but the Mr. Malty site list 2124 and 2206 as Weinstephan

I guess not all breweries try to limit the number of yeast they use.  maybe Weinstephan is big enough it's not a big deal for them.

Not too sure about 2206. That list is notoriously inaccurate.
