I have a package of T-58 I bought to try as part of the Tree House Brewing yest "Blend" but have decided not to bother with that.  Anyone use T-58 before that can give me an idea of how it use it up?  Would it work ok in a Belgian Single or Pattersbier?

Hit me with some ideas, quick turn around beers are even better.

It's got Belgian character, but it's heavier on the phenols than the fruit.

With that I take it temp control would be key...

Yep.  I keep it low.  Get a lot of bubblegum and banana otherwise.

Buy a bunch of apple juice and make hard cider with it.
