3 Sticks Butter or Margarine
3 Cups Sugar
3 Cups Flour
3/4 Cup 7-Up
1 Tablespoon Lemon Extract
Cream the butter and sugar together. Mix in the eggs, one at a time, then the flour, and finally the 7-Up and lemon extract. Pour batter into a greased bundt pan. Bake at 350°F for 45 minutes to 1 hour.
This is a really easy to make, dense (like a pound cake) lemon cake. Big hit wherever we take it. I think it actually works better with margarine instead of butter.
Some people drizzle a lemon glaze over it (powdered sugar and lemon juice)... I like it plain.
