Ah! I thought it was American grown hallertau or something.
Nope...I understand the confusion. YCH was originally gonna call it debittered leaf, but thought American noble was catchier. Unfortunately, it's also confusing.

It's got flavor out the wazoo!

It's got flavor out the wazoo. Other American malts I've tried are bland compared to it. IMO, it's the key to making a beer with a lot of flavor without a large amount of ingredients.
The other malts were boutique or artisan malts as well? I am just trying to gather if this is because there is something special about Mecca or if it is just because it is a higher grade malt in general. I want to try some Mecca stuff but at this point the price and shipping are a deal breaker when I have boutique malts close by.

Anything that's "boutique", "artisan", "farmhouse", "small-batch", "hand-crafted" or "heirloom" is good stuff. You can tell. There's a local Artisan who sells boutique water I'm anxious to try. He's an American but very noble

So what are the hops like? Is it all the aroma and flavor but minimal bitterness? Do they make it into pellets or is it all leaf?
Yes to all of that! Flavor mainly, a bit of aroma and virtually no bitterness.

Not really. When I did it before it was with Rahr or Great Western. I think at least part of it has to do with MG using the Full Pint barley variety, which not many people do. They're also working with OR State Univ. to develop new varieities.
