I know there have been a thread or two about the town and its breweries, but heading up there this week to fish and drink and there are a few I haven't hit yet.  Have done Green Man, Wedge, Wicked Weed, New Belgium and Highlands.  Any one familiar with One World, Burial Brewing or Eurisko?

Burial is my favorite brewery in Asheville. Haven't been to One World or Eurisko(never heard of that one). Twin Leaf is also good and in that area. BBQ at Buxton Hall is awesome. I generally never leave the South Slope area while in Asheville.

The mural at Burial makes it worth the trip alone.

Burial was good. It wasn't my favorite though. Bhramari was good. Twin Leaf was my favorite in town. Sierra Nevada was a wonderland. If you don't drive you can walk to 10-11 of them in downtown easily.

 

FWIW I like boring beer, not crazy or over spiced BS, or pastry beers. Give me a solid IPA and I'm happy. Give me a world class german beer and I'll do naughty things for another.

More and more I am getting like this. Started brewing to make the big, bold and hoppy beers and now I just want to brew what I thought was boring back then.

I'm just sick of crazy flavors that detract from it being a beer. It's like cooking. Creativity is a wonderful thing, but you have to have balance and it shouldn't detract from the main theme. Twin Leaf did a decent job at that when I was there. There were so many sours and crazy spiced or dessert beers on tap everywhere else that it bummed me out a bit.

 

You know who does a good job maintaining that balance? Sierra Nevada. Tons of styles of beer, but they still tasted like beer.

I am in agreement with both of you.  The first beers I drank were Kolchs in their native city and I more often than not find my self wondering why so many breweries fail to appreciate elegant simplicity and balance.  I can go a sour now and then, but I can not abide the soda fountain approach to beer.
