And what is going to preserve the beer?

I would still at a small amount of hops to help with that.

I think the biggest advantage could simply be extended shelf life after the hops begin to fade.

This may sound stupid but how important is the 'preservative' aspect of hops in beer in the age of refrigeration? I know that old-time brewers relied on hops to preserve beer centuries ago but does it still apply today?

I see beer sitting warm on the shelves all the time.

Sure but are they being preserved by hops or is it more the boiling of the beer and then keeping the beer free from the outside air and then being bottled up that is keeping it from spoiling?

The hops may help but I can't imagine they are required.
