Irish soda bread

Soda bread
4 cups flour
1 tsp salt
1 tsp baking soda
1 1/2 cups of buttermilk(plus up to 1/8 cup extra
Preheat oven to 425f. Incorporate dry ingredients in large mixing bowl, and slowly add buttermilk until ingredients are throughly mixed. If dough is still dry slowly add additional buttermilk till dough is sticky. Remove dough from bowl and place on a flour dusted surface and knead dough into a ball.(dusting with additional flour as needed) place on baking sheet on top of baking parchment flatten ball and cut 1/2” deep cross that covers the whole loaf. Bake for 45-48 minutes. Place on wire baking rack to cool, enjoy!
Note: You can paint a wash of left over buttermilk and water stop the loaf before you bake(I don’t)
I like to bake my bread inside a parchment lined Dutch over(covered) instead of on a baking sheet.

IME, it's a bit lighter and better risen if you cut that cross about 80% through the thickness. Leave just enough to hold it together but don't separate the cut - the bake will do that.

Sorry didn’t mean to come off like a dick, but I just shallow score so I have more usable bread surface that can be sliced.

There's a place around here that does the tea cake style. Irish soda bread base, but with chopped raisins and sparkling sugar on top. It's sofa king good.
This is the type of Soda Bread I'm used to also....
