Say you had a batch of wort that you couldn’t boil due to technical difficulties. The wort got up to 207.5 but never boiled. Could you boil it a day later?

Without. I actually solved the problem but I never thought about it.

I left an 8 oz sample of unboiled wort in a cup in a hot garage for a week before it started turning. N=1

Yep, no problem as long as it's tightly covered.  Once it spends 10-15 min. at 160F or above, it's pasteurized.
