This Saturday's batch: a Vienna Pale Lager by design. I was going to do a German Pil's first, but cold quaffable 'yellow' beer is something I have a bunch of on tap right now, hence this recipe. I'm hoping for mild caramel notes and a very pleasant Vienna maltiness I have come to love
Boil Time: 40 min
6 lbs Vienna Malt
5 lbs Pale Malt
8.0 oz Cara-Pils
5.0 oz Caramel/Crystal Malt - 40L
2.0 oz Caramel/Crystal Malt -120L
1.00 oz Tettnang [4.50 %] - Boil 35.0 min Hop 6 12.6 IBUs
1.00 oz Celeia [4.50 %] - Boil 15.0 min Hop 7 7.5 IBUs
1.50 oz Crystal [3.50 %] - Boil 10.0 min Hop 8 6.4 IBUs
2L 1st run of Omega Bayern Lager Yeast
Est Original Gravity: 1.053 SG
Est Final Gravity: 1.013 SG
Estimated Alcohol by Vol: 5.3 %
Bitterness: 26.5 IBUs
Est Color: 7.3 SRM

Looks good and should be very drinkable. I have a recipe drawn up for a "more pale Vienna lager" which is basically just our standard Vienna with less Carafa III in it. I think I used 2.5 ounces in 5 gallons usually but I'm using around an ounce this time. Couple that with my beers clocking in slightly more pale lately and it should just have a smidge of the dark color. Now that you have the Bayern up and running... are you getting any character from it yet? The aroma is outrageous.
The last Vienna Lager I made I over did the Carafa II and it was more Dunkel like imho. I've learned that I like some Carafa II or III and then to add the desired color I use Midnight W. All to one's palate I guess. The yeast is starting to shine through the DME on the stir plate. Pretty pleasant with this mornings sniff I'm excited to see what this strain can produce.

I concluded that my Vienna and my dunkel were a little too close so I considered leaning the Vienna towards "more pale" and slightly more hoppy and my dunkel towards the darker color and smoother with less hopitude. You're gonna love that yeast. Love it.
This is my thinking exactly and I ain't even half as beer smart as you.
