While the taste seems very appealing right now, the stuff is a powder keg. I hit both fermenters with Knox on Friday morning ~ 38 F and they're still cloudy AF this morning. Can I hit them again? Swirl em? I want them crystal clear.

Just trying to understand the process, you gelled in the fermenter not in the keg correct.

If so, I would let them settle a bit, rack to keg, and hit them again in the keg.

Yes, in the fermenters with the reasoning this was a one time use of this yeast.
 
 

If so, I would let them settle a bit, rack to keg, and hit them again in the keg.


Good strategy. I'm going to give them a swirl tonight and see what happens by the weekend. I intend on kegging Saturday.

Did you use the gel on them COLD? My beers went from "kind of clear" to "really clear" when I started using a gel solution in the keg when the beer was cold. I have been able to get 1007 and 2565 (both low floccers) beers crystal clear this way.

I do have Biofine. Drezz do you mind telling me your quantity and procedures again please :)


Did you use the gel on them COLD? My beers went from "kind of clear" to "really clear" when I started using a gel solution in the keg when the beer was cold. I have been able to get 1007 and 2565 (both low floccers) beers crystal clear this way.


The fermenters are sitting around 40 F which is about as good as it's going to get until they're kegged and in the dispensing fridge.

Cloudy or not, the smell and flavor is really nice. I'm hoping for a great batch (once it clears)

1-2 Tablespoons in the keg before I rack the beer.  My beer is usually cold since it is crashing before kegging.  1T for mildly hazy and 2T for HAZY beers. Jsut as a reminder, Biofine settles great the first time but not after that.  So once the beer is clear try not to move the keg or rack off the crud to a serving keg.

So if I add 2T's per keg then rack on top is that enough agitation or should I jiggle the kegs around too?

Racking on top of the biofine is enough.  If you add it to it after the fact you will need to agitate it some.

Racking on top of the biofine is enough.  If you add it to it after the fact you will need to agitate it some.

I suspect the haze is coming from some other part of your process. Those finings would have stripped the yeast out.

Must be. I've used WLP029 with the same cloudy results. Without my notes here, I fermented low 60's and once complete dropped it to 38 for a couple weeks. It was during that time I realized I had another cloudy Kolsch issue at hand. In the 3rd week I Knox'd the batch too with little to no clean up. Only to Biofine in the 4th week. I AM stumped.
